Pepperoni Pizza Burgers

Pizza Burger

Sometimes I am in the mood for a healthy salad or smoothie, or maybe a light chicken dish, and then sometimes I want a big, fat, cheesy, saucy burger. You can probably guess which craving I was having when these Pepperoni Pizza Burgers were created. Our family, like many, loves all things pizza. We go crazy for pizza grilled cheese, skillet pizza chicken, BBQ chicken pizza and especially a delivery pizza when mommy “just can’t”. This is a recipe that your whole family (especially the kids) will love and the best part is – it really doesn’t require much effort!

Edible Chocolate Chip Cookie Dough

Spoonful of edible chocolate chip cookie dough

Everyone knows that the best part of making homemade cookies is eating the dough. If you are like me, you have always eaten that stuff by the shovelful without ever thinking twice about salmonella or E. coli. I may not be concerned about giving myself food poisoning, but I am now responsible for the lives of four little ones, and they love cookie dough just as much as I do. Instant Pot Chicken and Orzo – Simple, Easy & Flavorful

A plate of instant pot chicken and orzo

A few days ago, I asked the members of Hungry Six’s Recipe Swap what type of kitchen gadget they just couldn’t live without. So many people love their Instant Pots! I already had an Instant Pot, and I had used it several times, to make things like my carnitas, but people were just raving about how they used theirs to make all kinds of things. Someone was saying that she made pasta in hers, and I started to have doubts. I mean, the pasta has to be overcooked and an awful texture, right? Anyways, I had some chicken that I needed to use and some orzo left from a failed recipe attempt. I decided to create something based on those two things. This Instant Pot Chicken and Orzo was born, and it is so easy and delicious!

Birthday Cake Muffins

Birthday cake muffins on cooling rack

My oldest daughter is absolutely obsessed with sprinkles. I am confident that if I let her, she would add sprinkles to every single thing she eats, and who can really blame her?! I often make baked goods with fruit or chocolate for breakfast (like these pancakes), but I have never really considered adding sprinkles. This morning, I suggested chocolate chips muffins for breakfast, and I could see how disappointed she was. I decided to change it up a bit and do birthday cake muffins instead!

Barbecue Chicken Pasta

One of the things that I prepare, that my husband loves most, is my barbecue chicken pizza. I really enjoy it as well, but I wanted to change things up a bit. I decided to take that recipe and create something new out of it. This pasta is easy enough to make for a weeknight dinner, kid friendly and also super flavorful at the same time. The chicken, barbecue sauce, pasta and cheese all come together to create something so tasty, and the cilantro and green onion round this dish off with exactly the flavors it needs.

Chicken Fried Rice – Quick, Easy & Better Than Take-Out

Chicken Fried Rice

Last night was one of those nights when I just couldn’t think of anything to make for dinner. I didn’t have a lot of stuff on hand, and I was not about to head out to the store in the rain with four little ones. So, I opened up the fridge and started looking for inspiration. I had some rice leftover from dinner a couple nights before, and it hit me – chicken fried rice! This is a great recipe because leftover rice is really better than fresh (fresh will work too, though). It also uses a lot of stuff you may already have on hand.

Pizza Grilled Cheese

If you have kids, and your kids are anything at all like mine, you are facing a constant battle when it comes to meal time. My kids would literally eat the same three meals every day and be perfectly content. Because I apparently like to make things harder for myself, I am always trying to come up with new ideas of things that I can cook for my kids that they will love. Guess what – this wasn’t one of those things. I made this pizza grilled cheese and thought my kids were going to go crazy over it. They. Wouldn’t. Even. Touch. It. If your kids are a little more adventurous than mine, I bet they will love it to. If not, I know you will!
