If you were anything like me as a kid, teenager or college student, you could have probably lived off ramen with no problem. I had a very specific process when I made my ramen. I would crush the noodles up while they were still in the packaging, boil the noodles, drain them completely, add the crazy high in sodium seasoning packet and exactly 2 cubes of ice so that I could dig in immediately without 3rd degree burns. A few things may have changed over the years as far as my pallet goes, but I will never be one to turn down some flavorful noodles! This Easy Spicy Chicken Ramen is flavorful, has a little heat and is loaded with fresh and delicious ingredients. The best news is that is only takes about 15 minutes to prepare!
This Chicken Pot Pie Soup is the perfect combination of two of the best comfort foods. I love making any kind of stir fry because it is so easy, so flavorful and so customizable. I like to throw in whatever protein and veggies I have on hand and get creative with the seasonings and sauces. This Easy Shrimp Stir Fry uses fresh shrimp, broccoli, red pepper, carrots and a fantastic sauce to create a healthy yet delicious meal that is ready in just 20 minutes. This dish is great on its own, or when served with rice or noodles.
Have you ever ordered Arancini from an Italian restaurant? If you have not, you are missing out. These fried rice balls are such an amazing appetizer! Last night was one of those nights when I just couldn’t think of anything to make for dinner. I didn’t have a lot of stuff on hand, and I was not about to head out to the store in the rain with four little ones. So, I opened up the fridge and started looking for inspiration. I had some rice leftover from dinner a couple nights before, and it hit me – chicken fried rice! This is a great recipe because leftover rice is really better than fresh (fresh will work too, though). It also uses a lot of stuff you may already have on hand.
I feel like one of the most important things to find when you move to a new area is great Asian food of all types. It is just one of those things that when the craving hits, you need that great little restaurant to head to. Well, we recently moved to a new area, and we have not found that spot yet. So, I had to improvise. Let me tell you – this sweet chili chicken and noodle stir fry did not disappoint!
