There really aren’t a lot of things in this world that I love more than pasta.  I mean, sure, I like my kids and my husband but I LOVE pasta (kidding).  Now imagine taking this amazing culinary creation and coating it with butter, cheese and just enough cracked pepper.  Sounds pretty simple, right?  It is.  Let me tell you, though, this combination is just what you need to satisfy that comfort food/pasta/butter/everything amazing craving that you know you are having. I get so tired of finding recipes that say “kid friendly” and when I serve it to my kids they look at me like I am asking them to eat a pile of dirt.  I can honestly say that this is a meal that can be thrown together in a very short amount of time, with very few ingredients, and the whole family will enjoy it. I find this recipe is always an easy dish that will impress anyone who loves pasta with a white sauce.

For the cheese in this dish, I really like to use pecorino but you could always substitute that with parmesan and it will be just as delicious.  You could also get crazy and do a mix of the two.  Also, I like bucatini for this dish because it is a heavier pasta, and I like that with such a rich sauce.  You could really use any pasta you like, and the results will be very similar.

Cacio e Pepe

This Cacio e Pepe is incredibly easy to make and is so rich and creamy that it will satisfy all of your comfort food pasta cravings.

Ingredients

  • 16 oz bucatini pasta or other pasta of your choice
  • 6 tbsp butter unsalted
  • 4 tbsp olive oil
  • 1 1/2 tsp black pepper fresh cracked
  • 10 oz pecorino cheese parmesan will work also

Instructions

  • Cook pasta in a large pot according to package directions.
  • While pasta is cooking, melt butter in a small saucepan over medium heat.  Mix in olive oil and pepper and toast for approximately 2 minutes.  
  • When pasta is done, drain and return to pot.  Add butter mixture and pecorino and toss to combine.  It really is that easy!  Enjoy!
