Spinach artichoke dip is one of my favorite appetizers to order at a restaurant. I could probably eat the whole order of it on my own, to be honest. I wanted to take those amazing ingredients and flavors and make a main dish out of it. There’s no reason all of that creamy deliciousness has to be contained to just the first course! This Instant Pot Spinach Artichoke Chicken Pasta is made completely in you pressure cooker for an easy meal with even easier clean up!

Sun Dried Tomato & Basil Pesto Chicken Melt
Boneless, skinless chicken breasts are definitely one of the most popular pieces of meat used these days for easy dinner recipes. I also love these recipes, but sometimes they leave much to be desired. Boneless, skinless chicken, if not prepared the right way, can be dry, bland and flavorless. This Sun Dried Tomato & Basil Pesto Chicken Melt is none of those things. This dish uses my homemade Sun Dried Tomato Basil Pesto and fresh mozzarella to create a recipe that is super easy to make and loaded with amazing flavor. Give it a try today!
The Best Easy Chicken Enchiladas with Homemade Sauce
When I think of the perfect home cooked meal, I am imagining anything saucy, flavorful and cheesy. These enchiladas are all of those things and then so much more, and that’s why they are called The Best Easy Chicken Enchiladas. The homemade sauce is really what makes these enchiladas. Making homemade enchilada sauce is really a very easy thing to do, and it is so much better than the stuff you can find at the grocery store. This is an excellent weeknight dinner recipe that comes together quickly, but tastes like something that took a lot longer to make.
Jumbo Mozzarella Stuffed Meatballs – Quick & Easy to Make
If meaty, cheesy and saucy are three adjectives that get you a little excited – you have come to the right place! These Jumbo Mozzarella Stuffed Meatballs are just what the name implies. They are flavorful ground beef meatballs stuffed with fresh mozzarella and baked in a bed of freshly made marinara sauce. All of this may sound like it takes an extreme amount of work to put together, but the meatballs and sauce come together in 10 minutes or less. After that, you just stick them in the oven, wait patiently and enjoy! If you are REALLY hungry, serve these up with some warm pasta, but I like them with a simple side salad or some fresh veggies.
Mexican Chicken and Biscuits Skillet
Today my big girl had her first dress rehearsal for her first dance recital ever. It was such a fun an exciting thing to experience with her. From the costumes, to the hair, to the makeup, she was all girl and all about it. On top of the dress rehearsal, we also had gymnastics and two baseball games today. Add a total of four small kids to that, and you have two very busy and very tired parents. We had a couple hours of down-time, so I wanted to make sure to prepare at least one home-cooked meal for the family. I had some random stuff on hand, and with that I came up with this Mexican Chicken and Biscuits Skillet.
Chorizo Stuffed Peppers – A Filling Complete Meal
So, today is Mother’s Day. A lot of moms say that the last thing they want to do on Mother’s Day is cook. Personally, I really wanted to cook – I just wanted to be left alone by everyone in my family when I did it. I also wanted to serve the meal to my family and not hear one complaint about it. Both of those wishes were granted, and it was amazing! My husband is really not a bell pepper fan, but I took advantage of the holiday and made these Chorizo Stuffed Peppers mostly just for myself. Even though he doesn’t care for the peppers, he actually really enjoyed these, or maybe he just liked the queso he drenched them in?!
Sausage and Cheese Cornbread Muffins
I really love cooking and baking and I take pride in making things from scratch. It really makes me feel good to know exactly what is going into the food that I am making for my family (even if it is something loaded with sugar). You want to know what I hate? Absolutely anything that happens before about 9am. I am the complete opposite of a morning person, but for some reason my family keeps on waking up at a normal time and expecting breakfast. Because I have this profound hatred for the morning, I am always looking for ways to simplify my breakfast recipes. Enter these sausage and cheese cornbread muffins. I made these just a little easier by using a box of corn muffin mix, and I am so thankful for that when I am making a half-asleep Sunday morning breakfast.
Slow Cooker Au Gratin Potatoes – Easy & Delicious!
One of the hardest things about hosting a holiday gathering, is managing your oven space. I feel like I am always trying to plan everything out just right to make sure that I will be able to fit everything in the oven and have it ready on time, and there is always that one guest who arrives with something that they need to stick in the oven. I dream of having double ovens one day, but I don’t have them now, so I have had to get creative with my holiday meal planning. These Slow Cooker Au Gratin Potatoes cook completely in the slow cooker, so oven space is freed, and you can set it and forget it. It’s always nice to have one less thing to worry about!
Loaded Breakfast Potatoes
Breakfast time on the weekend is one of my favorite times. We are always so busy during the week, and breakfast is almost always a very rushed experience. Honestly, I hardly ever find the time to eat until way after lunch time. When the weekend rolls around, though, and we are all home, we take … Read more
Barbecue Chicken Pizza – A Delicious Family Favorite
One day, soon after my husband and I first got married, I had a craving for barbecue chicken pizza. I went into the kitchen and threw one together with what I had on hand. Based on my husbands reaction, you would have thought that I had spent hours in the kitchen making the most gourmet meal in the world. I just went along with it and let him think I had done something miraculous. The thing is – this pizza is super easy and so delicious. Years later, we are still eating it on a regular basis!
