I have never been a huge breakfast person. I feel like everyone tends to have the same things over and over for breakfast. Eggs, bacon, sausage, fruit and repeat. My husband and kids always want a big breakfast on the weekend, but it just bores me. Eggs in Purgatory, or Shakshouka, is one breakfast dish that I can get behind. This is still a traditional breakfast dish because of the eggs, but it is different and exciting enough that I look forward to waking up for it!

Today my big girl had her first dress rehearsal for her first dance recital ever. It was such a fun an exciting thing to experience with her. From the costumes, to the hair, to the makeup, she was all girl and all about it. On top of the dress rehearsal, we also had gymnastics and two baseball games today. Add a total of four small kids to that, and you have two very busy and very tired parents. We had a couple hours of down-time, so I wanted to make sure to prepare at least one home-cooked meal for the family. I had some random stuff on hand, and with that I came up with this Mexican Chicken and Biscuits Skillet.

Yesterday was one of those days that I just could not decide what I wanted for dinner. I knew that I wanted something that was somewhat low-carb and light, but I had no idea what it was. There were some chicken breasts in the fridge that I needed to use, and so I started thinking. I absolutely love cooking in my cast iron skillet (if you don’t have one, you NEED one!), and I had some fresh mozzarella that I grabbed at the store as a complete impulse buy, so I decided to base a recipe on those three things, and this Pizza Chicken Skillet was born!
