Yesterday was one of those days that I just could not decide what I wanted for dinner. I knew that I wanted something that was somewhat low-carb and light, but I had no idea what it was. There were some chicken breasts in the fridge that I needed to use, and so I started thinking. I absolutely love cooking in my cast iron skillet (if you don’t have one, you NEED one!), and I had some fresh mozzarella that I grabbed at the store as a complete impulse buy, so I decided to base a recipe on those three things, and this Pizza Chicken Skillet was born!
