During the week, my life is so crazy. Well, really it is crazy all of the time with four kids, but it is even crazier on weeknights. I am always on the lookout for a great slow cooker meal. I love being able to throw the ingredients in earlier in the day, and have a meal ready to go at dinner time. This slow cooker lemon cream chicken is just right for this time of year. The sauce is so flavorful and not too heavy. This could be great with a side salad or some veggies is you are being health conscious, or it would be amazing over a bed of rice or pasta as well.
An added bonus of this chicken is that it has only 7 carbs and 349 calories. This is an easy and delicious low carb or Keto recipe!

Slow Cooker Lemon Cream Chicken
- Slow cooker
- 4 chicken breasts approx. 1.5lb total
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp Italian seasoning
- 2 lemons juiced
- 2 tbsp butter unsalted
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 3 tbsp cornstarch
- Grease your slow cooker insert with cooking spray. Place the chicken breasts in the slow cooker. Add the: salt, pepper, Italian seasoning, lemon juice, butter and chicken broth. Cook on low for 4 hours.
- After 4 hours, whisk together the heavy cream and cornstarch in a small bowl. Pour this into the crockpot, increase the heat to high and cook for an additional hour.
- Serve the chicken with a salad, veggies, rice or pasta.
