Slow Cooker Lemon Cream Chicken

During the week, my life is so crazy. Well, really it is crazy all of the time with four kids, but it is even crazier on weeknights. I am always on the lookout for a great slow cooker meal. I love being able to throw the ingredients in earlier in the day, and have a meal ready to go at dinner time. This slow cooker lemon cream chicken is just right for this time of year. The sauce is so flavorful and not too heavy. This could be great with a side salad or some veggies is you are being health conscious, or it would be amazing over a bed of rice or pasta as well.

Making this chicken is so easy. You just throw the chicken, seasonings, lemon juice, broth and a little butter in the slow cooker and then let it do it’s thing! When you are almost ready to eat, add some cream and cornstarch to make this a thick creamy sauce and let that cook a little longer. This recipe calls for four chicken breasts, but mine were pretty big, so I cut it down to three. Either way, you should aim for around one and a half pounds of chicken.

An added bonus of this chicken is that it has only 7 carbs and 349 calories. This is an easy and delicious low carb or Keto recipe!

Please let me know how this recipe turns out for you! Enjoy!
