Honey Lime Chicken Drumsticks

So, yesterday I posted a recipe for my street corn off the cob, and I was trying to think of a main dish to go with it. I had some chicken drumsticks that I needed to use and a bunch of limes so I came up with this honey lime chicken. I love chicken drumsticks because they are so affordable and so delicious at the same time. These drumsticks have a delicious sticky sweet glaze and a ton of flavor.

Making these drumsticks is as simple as browning the chicken for a few minutes and then allowing them to simmer in the honey lime sauce. After that you just let the sauce reduce until it is a thick delicious glaze. These will go great with the street corn, a salad, steamed veggies or some rice. I like to sprinkle some chopped green onion on top and you could squeeze a little lime juice as well for an extra kick of flavor. I used a tablespoon of sriracha for this recipe. Typically, I would probably use a little more. You can omit the sriracha entirely if you do not want a little spice.

Honey Lime Chicken Drumsticks

Ingredients

  • 2 tbsp olive oil
  • 8 chicken drumsticks
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp cumin
  • 1/3 cup honey
  • 2 limes juiced
  • 1/3 cup soy sauce low sodium
  • 2 cloves garlic mined
  • 1 tbsp sriracha optional
  • 2 green onions chopped

Instructions

  • Heat a deep skillet or frying pan with a lid over medium-high heat.  Season chicken with salt and pepper.  Add olive oil and chicken to pan and brown on each side for about 2 minutes.  
  • In a separate bowl, mix together the cumin, honey, lime juice, soy sauce, garlic and sriracha.  Pour this mixture over the chicken and bring to a boil.  Once it is boiling, reduce the heat to low and cover the pan.  Allow to simmer for about 20 minutes flipping the chicken once halfway through.
  • After 20 minutes, remove the lid and increase the heat to high.  Cook on high until the sauce begins to thicken.  This will take about 10 minutes.  Flip the chicken often during this time.  Once the sauce has thickened, remove the pan from the heat.  Place the chicken on a plate and drizzle the sauce on top.  Top with chopped green onions and enjoy!
