Eggs in Purgatory (Shakshouka)
I have never been a huge breakfast person. I feel like everyone tends to have the same things over and over for breakfast. Eggs, bacon, sausage, fruit and repeat. My husband and kids always want a big breakfast on the weekend, but it just bores me. Eggs in Purgatory, or Shakshouka, is one breakfast dish that I can get behind. This is still a traditional breakfast dish because of the eggs, but it is different and exciting enough that I look forward to waking up for it!

Smoothies are a lifesaver for me when it comes to breakfast. As a mom of four small children, my mornings are always hectic. If I don’t come up with something quick and easy that I can have on the go, I won’t end up eating breakfast at all. Birthday Cake Muffins
My oldest daughter is absolutely obsessed with sprinkles. I am confident that if I let her, she would add sprinkles to every single thing she eats, and who can really blame her?! I often make baked goods with fruit or chocolate for breakfast (like these pancakes), but I have never really considered adding sprinkles. This morning, I suggested chocolate chips muffins for breakfast, and I could see how disappointed she was. I decided to change it up a bit and do birthday cake muffins instead!
Sausage and Cheese Cornbread Muffins
I really love cooking and baking and I take pride in making things from scratch. Colby’s Pancakes – Quick and Easy Homemade Pancakes
My son is honestly the pickiest eater I know. I mean this kid lives off of peanut butter and Nutella sandwiches and I have given up on getting him to eat any vegetables. As a mom, I love making food that my kids are actually going to eat and enjoy. For my son, “Colby’s Pancakes” are one of the only things that I know I can make for him and he will clean his plate every single time. Really though, the whole family loves these pancakes, so they are a weekend morning regular around here for sure. It probably doesn’t hurt that they are usually full of chocolate chips, fruit or sprinkles and topped with butter!

I always go to the grocery store with the healthiest of plans. I buy all of these fruits and vegetables and then we only eat a portion of them before they have gone bad.
