Brookie Cheesecake
Ingredients
- 20 oz package brownie mix
- ⅓ cup vegetable oil
- ⅓ cup water
- 3 eggs
- 16 oz cream cheese softened
- ¾ cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1½ cup chocolate chip cookie dough store-bought or homemade
Instructions
- Preheat the oven to 350° and grease a 13×9 inch baking dish.
- In a mixing bowl, combine the brownie mix, vegetable oil, water and 1 egg. Pour this mixture into the prepared baking dish and bake for 10 minutes. The brownie base WILL NOT be cooked completely – that's okay!
- While the brownie base is in the oven, use your mixer to combine the cream cheese, 2 eggs, sugar and vanilla. Mix until smooth and well combined.
- Remove the brownie base from the oven and pour the cream cheese mixture on top. Spread the cream cheese mixture out gently. The brownie batter will mix in slightly, and that is okay.
- Drop pieces of cookie dough about an inch big all over the top of the cheesecake mixture. Bake in the preheated oven for 35 minutes. Cool on the counter for 30 minutes and then in the refrigerator for at least 3.5 hours before serving.
