If you have never heard the term “brookie”, let me explain. Anything that is described as brookie is a combination of brownie and cookie. I have taken super chocolatey brownie batter and classic chocolate chip cookie dough and combined them to make a “cupcake”. I then created a decadent chocolate chip cookie dough frosting and put a hefty scoop of it on top of each cupcake. These brookie cupcakes with cookie dough frosting may just be my family’s new favorite dessert!

My cookie, brownie and cookie dough frosting recipe could each be enjoyed on their own as well. The frosting is a great edible cookie dough, and you could make some excellent chocolate chip cookies or brownies with those recipes. You could also make the brookie cupcakes ahead of time and freeze them for up to 3 months before enjoying! Another fun thing to do would be to make mini versions of these in mini muffin tins, or a large version in a cake pan or cast iron skillet. No matter what you do, I hope you enjoy this recipe!

Ingredients

Chocolate Chip Cookie

  • cup unsalted butter melted
  • cup brown sugar packed
  • ¼ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • ½ tsp baking soda
  • 1 tsp cornstarch
  • ¼ tsp salt
  • ½ cup mini semi-sweet chocolate chips

Brownie

  • ½ cup + 1 tbsp unsalted butter melted
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • ½ cup all purpose flour
  • cup unsweetened cocoa powder
  • tsp salt
  • ½ cup chocolate chips

Cookie Dough Frosting

  • ½ cup unsalted butter softened
  • ¾ cup brown sugar packed
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • ½ tsp salt
  • 3 tbsp milk
  • 1 cup mini chocolate chips

Instructions

Cookie

  • Cream together the melted butter, granulted sugar and brown sugar. Add in the egg and vanilla and combine. Add the flour, baking soda, cornstarch and salt and mix just until combined. Fold in the chocolate chips. Place the cookie dough in the refrigerator.

Brownie

  • Cream together the melted butter and sugar. Add in the eggs and vanilla and combine. Add in the flour, cocoa powder and salt and mix just until combined. Fold in the chocolate chips.

Cupcakes

  • Preheat the oven to 325° and liberally grease a 12 cup muffin tin.
  • Put equal amounts of cookie dough (about 1.5 tbsp) in each muffin tin and push it to one side. Put equal amounts of brownie batter (about 2 tbsp) in the other side of each muffin tin. Bake in the preheated oven for 18-22 minutes, or until the centers are set. Allow to cool completely in the muffin tins before removing and frosting.

Cookie Dough Frosting

  • Cream together the softened butter and brown sugar. Add in the vanilla and mix well. Add in the flour, salt and milk and whip together for approximately 2 minutes. Fold in the chocolate chips.

Notes

If you are concerned about the raw flour in the frosting (I am not), you can kill any potential bacteria by microwaving the flour for 1 minute and 15 seconds.  Stop every 30 seconds to stir the flour and scrape down the sides of the bowl.  Allow the flour to cool before adding it to the frosting.
