It is always so nice to be able to head out to the garden, grab some fresh vegetables and throw a delicious dish together in just a few minutes. This healthy salad uses fresh cucumber, tomatoes, red onion, and a vinaigrette dressing to create the perfect side dish for those hot summer days when no one wants to heat the kitchen up by using the stove. You can toss this together early in the day, stick it in the fridge and have a delicious “salad” ready at dinner time. A serving of this comes in at only 133 calories and 9 net carbs, so this is one flavorful recipe that you won’t feel bad about enjoying! Try it out today!
Tips for making Cucumber, Tomato and Onion Salad:
- Be sure to let it marinate! You want to make sure you give all of the flavors time to combine and to be absorbed by the vegetables!
- Cucumbers and tomatoes can vary greatly in size – especially those that are homegrown. Use your best judgement when deciding how many to use.
- Feel free to use a different sweetener, or even omit it if you are following a diet that requires you to do so.

Cucumber, Tomato and Onion Salad
Ingredients
- ½ red onion
- ¼ cup olive oil
- ½ cup white vinegar
- 2 tsp salt
- 3 tbsp granulated sugar
- 3 medium cucumbers
- 2 large tomatoes
Instructions
- Slice the red onion. Combine it in a large bowl with the oil, vinegar, salt and sugar. Put to the side. Peel and slice the cucumbers and chop the tomatoes and add them to the bowl. Toss everything together and allow to marinate in the fridge for at least an hour before eating.
