
In the summer, I am always looking for dinner ideas that are quick and easy, but also lighter and healthier. I also love grilling, as it makes it easier to keep a watchful eye on my little ones as they play outdoors. This bruschetta chicken takes only about 15 minutes to prepare, it can be grilled or prepared on the stovetop and it comes in at under 500 calories and only 7 net carbs. This would be a great way to use those delicious fresh summertime tomatoes!

Bruschetta Chicken
A quick and healthy chicken recipe that is loaded with flavor.

Ingredients
Bruschetta
- 5 roma tomatoes diced
- ¼ medium red onion diced
- 4 cloves garlic minced
- 4 tbsp fresh basil chopped
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- ½ tsp kosher salt
- ¼ tsp black pepper
Chicken
- 1.5 lb boneless, skinless chicken breasts sliced thin
- 2 tbsp olive oil
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp Italian seasoning
- 8 oz fresh mozzarella sliced
- balsamic glaze optional
Instructions
- Make the bruschetta by combining the tomatoes, onion, garlic, basil, balsamic, olive oil, salt and pepper in a large bowl. Place in the refrigerator for at least 10 minutes to marinate.
- Heat your grill or a large skillet on the stove over medium high heat. Slice the chicken horizontally if needed to create ½ inch thin or thinner pieces of chicken. Rub the thin sliced chicken breasts with the olive oil, Italian seasoning, salt and pepper.
- Grill the chicken for approximately 4 minutes on one side. Flip the chicken and top it with the sliced mozzarella. Cook the chicken for appromixately 4 more minutes, or until it is cooked through.
- Top the chicken with the bruschetta and balsamic glaze if desired. Enjoy!
