Spicy Zucchini Corn and Tomato Salad

One of the best things about summer is all of the fresh garden vegetables. This Spicy Zucchini, Corn and Tomato salad is a great way to use those vegetables in a delicious recipe. This side dish is full of flavor and easy to make. A delicious vinaigrette dressing that you will whisk together in just a few seconds will add just what these fresh veggies need to take them to the next level. Enjoy this dish hot or chilled. This would be excellent served with some simple grilled meat, as a side with tacos or double the recipe or even more and serve it at your next summer gathering.

Tips for making this recipe

Use fresh corn! Although you can substitute with frozen corn if you must, there is nothing quite like fresh corn in the summer!

Make sure to get a slight char on the corn. This will give the dish an unmistakable flavor that you won’t want to miss.

Don’t overcook your zucchini. Zucchini can quickly turn mushy when overcooked. Add it in after your corn is slightly charred and cook it just enough. This should only take a couple minutes.

If you like things spicy, leave the seeds in your jalapeño. If you would rather have it more mild, feel free to remove the seeds, or even leave the jalapeño out all together.

Ingredients

Salad

  • 1 tbsp olive oil
  • 4 ears corn kernels cut off
  • 3 medium zucchinis diced
  • 1 jalapeno diced
  • 10 salad tomatoes halved

Dressing

  • 2 limes juiced
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 tsp cumin
  • ¼ cup cilantro chopped
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Make the dressing by combining the lime juice, 1 tbsp oil, vinegar, honey, cumin, cilantro, salt and pepper. Whisk together and set aside.
  • Heat a large skillet over medium-high heat and add 1 tbsp of olive oil. Add the corn kernels and sautee until it begins to slightly char. Add the zucchini and jalapeno and sautee until the zucchini has begun to soften.
  • Remove the skillet from heat and toss in the tomatoes and dressing. Enjoy!
