Sweet Chili Chicken and Noodle Stir Fry

Ingredients

  • 1 tbsp Olive oil
  • 1 lb Chicken breasts Cut into bite sized pieces
  • 2 Carrots Chopped
  • 1 Red bell pepper Chopped
  • 4 Green onions Sliced into 1 inch pieces
  • 3 cloves Garlic Minced
  • 2 tbsp Soy sauce low sodium
  • 10 oz Sweet chili sauce
  • 1 Lime
  • 1 bunch Basil
  • 14 oz Rice stir-fry noodles

Instructions

  • Heat a large frying pan or wok over medium heat and add olive oil.  Add chicken and cook for about 5 minutes.  Add carrots, pepper, onion and garlic.
  • While the chicken and vegetables are cooking, prepare the rice noodles according to the package instructions.  Drain when finished.
  • When the chicken is cooked through and the noodles are ready, add the noodles, soy sauce and sweet chili sauce to the pan with the chicken and vegetables.  Toss to combine.  Increase heat to high and stir-fry for approximately 2 minutes.  
  • Add juice from 1 lime and basil leaves.  Toss to combine.  Top with sriracha if you like and enjoy!
