Make the dressing by combining the lime juice, 1 tbsp oil, vinegar, honey, cumin, cilantro, salt and pepper. Whisk together and set aside.
Heat a large skillet over medium-high heat and add 1 tbsp of olive oil. Add the corn kernels and sautee until it begins to slightly char. Add the zucchini and jalapeno and sautee until the zucchini has begun to soften.
Remove the skillet from heat and toss in the tomatoes and dressing. Enjoy!
