Ingredients

  • 2 lb red potatoes washed and cubed (NOT peeled)
  • 1 tsp salt plus more for water
  • ½ tsp black pepper
  • 2 tbsp unsalted butter
  • 3 tbsp sour cream
  • ½ cup chicken broth
  • ¼ cup milk
  • 1 tbsp parsley

Instructions

  • Place the washed and cubed potatoes in a large pot and cover them with salted water. Place the pot on the stove over high heat. Allow the water to come to a boil, and then reduce the heat to medium. Simmer the potatoes for approximately 20 minutes, or until they are fork tender.
  • Remove the pot from heat, drain the potatoes and then return them to the pot. Add the salt, pepper, butter, sour cream, broth and milk. Using a potato masher, mash the potatoes together with the ingredients until the potatoes are smooth and the ingredients are incorporated. Fold in the parsley and serve.
