Eggs in Purgatory (Shakshouka)

Skillet of eggs in purgatory

I have never been a huge breakfast person. I feel like everyone tends to have the same things over and over for breakfast. Eggs, bacon, sausage, fruit and repeat. My husband and kids always want a big breakfast on the weekend, but it just bores me. Eggs in Purgatory, or Shakshouka, is one breakfast dish that I can get behind. This is still a traditional breakfast dish because of the eggs, but it is different and exciting enough that I look forward to waking up for it!

Edible Chocolate Chip Cookie Dough

Spoonful of edible chocolate chip cookie dough

Everyone knows that the best part of making homemade cookies is eating the dough. If you are like me, you have always eaten that stuff by the shovelful without ever thinking twice about salmonella or E. coli. I may not be concerned about giving myself food poisoning, but I am now responsible for the lives of four little ones, and they love cookie dough just as much as I do. This edible chocolate chip cookie dough recipe will satisfy your cookie dough craving without the risk of dying because of it.

Lemon Lime Sangria

a pitcher and a glass full of lemon lime sangria

We had a group of people over for dinner a while back, and I didn’t know them very well. I went out and bought a pretty large selection of alcohol just because I wasn’t sure what they liked. Part of that alcohol purchase was some white wine. Now I am a wine drinker through and through, but I tend to drink red more often. These two bottles of Pinot Grigio have just been sitting around since then, so I decided to make good use of them. Today was a hot day – the kind of day when I want to just hang out outdoors with a nice adult beverage. I started brainstorming and decided to make a lemon lime sangria because I thought it would be super refreshing for the hot weather.

Individual no-bake cheesecake with cheery topping

I can feel it! Summer is here (well almost)! Summer is completely my favorite season. I am all about the sun and the heat, but mostly I am all about not having to rush my kids off to school every morning. With summer comes two things: lots of cookouts and get-togethers and also moms serving things that require little to no effort to prepare because they “don’t want to heat the house up with the oven”. I may be one of those moms more often than I would like to admit! These Individual No-Bake Cheesecakes are great because they are easy to transport and also easy to serve. They are also great because they require no baking at all.

I know, I know…when you hear ramen all you probably think of is the pack of noodles that kept you alive through college. Birthday Cake Muffins

Birthday cake muffins on cooling rack

My oldest daughter is absolutely obsessed with sprinkles. I am confident that if I let her, she would add sprinkles to every single thing she eats, and who can really blame her?! I often make baked goods with fruit or chocolate for breakfast (like these pancakes), but I have never really considered adding sprinkles. This morning, I suggested chocolate chips muffins for breakfast, and I could see how disappointed she was. I decided to change it up a bit and do birthday cake muffins instead!

White Queso Dip – Like your Favorite Mexican Restaurant!

White Queso Dip

If you are like me – every time you go to a Mexican Restaurant you are ordering queso (and probably the large one). If my husband and I go to any other type of restaurant, we usually spend an eternity trying to force each other to decide what type of appetizer we want to share. If we go to a Mexican place, it is just an unwritten rule – we ARE getting queso. I have been trying for a while to make the perfect white queso dip at home, and it has been really difficult. But today, I finally got it right! I guess it just needed to be Cinco de Mayo for it to work out!
