In the winter months (and sometimes in the summer, too), if I ask my husband what he wants for dinner, I am going to get one of two answers – potato soup or The Best Spicy Chili. I have been making my chili this same way for years, and I have yet to have any better! If you like your food with a kick, you are going to love this recipe! Making this chili takes just about 15 minutes, and then you will just let all of the flavors simmer together. To me, plain white rice is something that I eat only as an accompaniment to something else. It is never something that I am excited about, and it is most definitely never the best part of any meal. If you are like me – every time you go to a Mexican Restaurant you are ordering queso (and probably the large one). If my husband and I go to any other type of restaurant, we usually spend an eternity trying to force each other to decide what type of appetizer we want to share. If we go to a Mexican place, it is just an unwritten rule – we ARE getting queso. I have been trying for a while to make the perfect white queso dip at home, and it has been really difficult.
