Arugula Salad with Lemon and Shaved Parmesan

Ever since I started this blog, I have been eating like crazy. All of the recipes you see here have been prepared, tested, improved and made again. Guess who does most of that testing – yours truly! Don’t get me wrong, I love it all, but sometimes I just want a nice fresh salad, so last night that is just what I had. This Arugula Salad with Lemon and Shaved Parmesan is a very quick and easy thing to throw together. I contemplated not even making a recipe for this, but I know that I personally just need some inspiration sometimes, so I thought maybe someone else would too.

Making this salad is as simple as tossing baby arugula with some EVOO, lemon juice, salt and pepper. It is then topped with shaved parmesan, and that’s it! It would be great topped with a protein, as a first course or as a side. We had it last night with pork tenderloin, and the two went perfectly together. If you love the flavor of fresh squeezed lemon and you are looking for a simple, light and fresh salad – this one is for you!

  • 5 oz baby arugula
  • 4 tbsp olive oil
  • 1 lemon juiced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper fresh cracked
  • 1/2 cup parmesan cheese shaved


  • Place the arugula in a large bowl.  Drizzle the olive oil and lemon juice on top and season with the salt and pepper.  Toss the salad to combine.  Top with the shaved parmesan cheese.  Serve and enjoy!
